This time of year is typically cold, wet and nasty. However, this weekend it felt like spring came to our little corner of the world. Who could complain? With temperatures in the high 50’s and mid 60’s, with sunshine, it seemed to put everyone in a better mood. With this warm weather, I am not exactly sure why I wanted comfort food, but it just seemed, well, comforting.
This Saturday I wanted to try a new recipe. Chunky Chicken Chili, as my husband says, my “go to” dish (chili that is). He said this because I teased him during the week that his “go to” dish is Jambalaya, and he couldn’t argue with me. Even though I teased him, the Jambalaya was very good! (thank you Brian)
I went to the grocery store to buy the ingredients for this new chili dish. The recipe called for boneless chicken thighs, against my better judgement, I purchased them. Anyone who knows me, knows I do NOT eat dark meat anything! As I cleaned the boneless chicken thighs, it seemed anything but appetizing. I continued with the recipe, which did smell amazing.
Brian came home and we sat down to eat dinner. He knows how I feel about dark meat and he was surprised I didn’t change it and use white meat. I should have! I am not sure if it is psychological or the actual taste of the dark meat, maybe a little of both, but I loved the sauce and vegetables and could have done without the meat.
Regardless, the recipe was really yummy and so easy to make. I would recommend making it, but if you are anything like me, don’t use dark meat, definitely use white meat.
